Outdoor Adventures

Like I mentioned previously, we had a great weekend! We had the perfect balance between activity and relaxation.

Friday night we went to Ryan and Sarah's and watched a Harry Potter movie (the 4th or 5th, who can remember such details). Erik and Ryan were falling asleep towards the end, but Kim and I stayed strong!

Saturday we caught up on some house work, took the dogs to the park, and headed over to Beaverton again for a BBQ at Todd's place. All the food was great and the company was pretty good too ;

Sunday we went on a bike ride downtown. It took about 45 minutes to get the the waterfront (we were riding pretty leisurely). The trail started getting pretty busy once we were down there, so we walked our bikes while looking for a bit to eat. After some tasty gyros and sunbathing, we headed back home! We both got a little sun burned, but I've had worse. Total i think our mileage was about 25 miles.

Today we brought the dogs up to Powell-Butte Park (about a ten minute drive). It was such a gorgeous day and of course the dogs loved running around. A perfect weekend!








I almost forgot to mention my first pie of the season! Believe it or not, I actually got the rhubarb for this Strawberry-Rhubarb pie from the garden already!

Cheese Buttons

Erik and I had a great Memorial Day weekend, but what 3-day weekend isn't great? Make me wish we work 4-tens, that would be amazing!

First I wanted to put up some pictures from the weekend that my mom visited us. We had a lot of fun, although it was too short of a visit! She enjoyed seeing our new place and the neighborhood. She also taught me how to make cheese buttons!

1: Rinse all the cream off cottage cheese

2: Dry the curds out in the fridge (overnight)

3: Smile!

4: Make the dough (basically noodle dough)

5: Roll it out super-thin

6: Cut the dough into squares

7: Fill the dough with cheese and press the sides together

8: Ta da!

9: Boil the cheese buttons until the dough is cooked


10: Fry the cheese buttons in butter until lightly browned

11: Serve warm with salt and pepper!

New House

Ok I have finally taken pictures of our place, outdoor ones will be taken when its a little nicer outside.

To My Legion of Fans (Maria)

We have been busy busy busy. Mostly with preparing to move, and finally moving a little over a week ago! Of course I have to go all the way back to Christmas first, which of course was great. At first we thought we might be stuck in Portland due to the "Arctic Blast". But, the highway finally opened up again and we were on our way. Christmas in Idaho was great but not long enough.

I will update with pictures of our new house within the next couple of days. We are very excited to finally be on the east side. Its pretty great being close to work and not sharing a wall with anyone! Anyway, more details on that later.
